During our visit to Kanem Farm, a botanical farm dedicated to traditional medicine and nutrition, we had the honor of participating in a traditional Gambian cooking class. 🔪
On the menu: Domoda, a rich and hearty stew made with seasonal vegetables, typically pumpkin or sweet potato, and a flavorful peanut-based sauce. We prepared everything from scratch alongside the warm and welcoming women of the farm. Together, we washed the vegetables and crushed garlic, onion, tomato, and chili into a thick, aromatic paste using a traditional mortar and pestle. The stew included beef and cow heart, adding depth and richness. For carbohydrates, we made findou, a grain similar to couscous, and flavored it with baobab powder, which comes from the iconic African baobab trees. As a special touch, the women had prepared traditional clothing for us to wear during the class, making the experience even more immersive.
After cooking, we all gathered in the serene botanical garden to enjoy our Domoda together, our guide joined us and couldn’t stop raving about the flavors, haha! It was an unforgettable moment of culture, food, and connection. 🍴🥣
