Spend the morning walking around the (small) Agios Nikolaos harbour for some people watching. Have a coffee right next to the water and take a dip in the (very blue!) sea.

Navagio Beach viewpoint for sunset
No trip to Zakynthos without a view at the most famous viewpoint: Navagio Beach. You feel so very small here, it's simply stunning. Pinched myself whilst looking at the giant cliff laying down in the endless sea. Go during sunset to have the prettiest colors.
