Tucked away in a side street off the vibrant Djemaa el Fnaa square, Chez Lamine Hadj Mustapha is a hidden gem that offers an authentic taste of Moroccan culinary tradition.
Jalal, the welcoming patron, runs this remarkable establishment, having taken over from his father, who once worked as a chef for the king. Here, you can experience an age-old family tradition: whole lambs are slow-cooked in an underground oven.
The process begins five hours in advance, when a fire of cedarwood is carefully lit. Once the fire reaches the perfect temperature, the lambs are lowered into the underground oven, where they cook for two hours. The result? An explosion of pure, natural flavors.
From 11:00 am, you can choose your own piece of tender lamb, served with a simple combination of cumin and salt – simple comme bonjour! Don’t miss the opportunity to ask for a piece of bread dipped in the rich lamb juices.
